Harvesting Horseradish
Tips from our growers:
- In Collinsville’s zone, roots are ready for harvest in October, but it’s ideal to wait until after the first frost
- You can leave the roots in the ground until the ground thaws in February as well
- Dig around the base and lift the center root and as many of the secondary roots as possible
- If you raised and suckered the horseradish root, it may resemble the shape of the root below
- Remove the secondary roots, but remember to save them as they will be what you plant for planting next season’s crop.
- Now you’re ready to clean, grind, and enjoy!

- Store harvested roots in the refrigerator in a perforated plastic bag
- If it’s a sealed bag just poke a few holes for airflow
- The root will store in the refrigerator for a couple of months
